• Extraction and modification of alternative plant-based proteins
• Utilization of agricultural wastes for value-added product development
• Application of innovative processing techniques like pulsed electric field and microwave-assisted enzymatic hydrolysis
• Exploration of novel sources of bioactive compounds and antioxidants
• Development of functional food ingredients
